— 1 cup (0.24 l) of crushed cashews

— 3 tablespoons of melted coconut oil

— 400g of cream cheese (or vegan option)

— 1/2 cup of coconut sugar

— Juice and zest of 1 lemon

— 1 teaspoon of vanilla extract

— Red berries (strawberries, raspberries, blackberries) for decoration
 

Preparation:

1. In a food processor, mix the crushed cashews with the melted coconut oil until it forms a dough.

2. Press this dough into the bottom of a pie dish, creating the base.

3. In a mixer, combine the cream cheese, coconut sugar, lemon juice, and vanilla extract until you get a homogeneous cream.

4. Pour this cream over the cashew base and smooth the surface.

5. Refrigerate for at least 4 hours, or until set.

6. Before serving, decorate with the red berries.
